During vacuum frying, fruits and vegetables are suspended in cooking oil, under vacuum and are exposed to heating at 80 to 100 degree Celsius. You might be pondering about the oil now, so here comes the best part! The oil is eliminated from the final fried product by a process called centrifugal de-oiling. As compared to conventional frying, vacuum frying is highly beneficial in that it improves fried product safety, quality and reduced oil oxidation as the frying process takes place at low temperatures. Whereas in traditional methods, due to deep frying at higher temperatures, nutrients are depleted to a large extent and the oil undergoes oxidation which causes rancidity. The minimal temperatures and substantially reduced contact with oxygen contribute to preservation of nutrients, protection of oil quality and negligible generation of toxic compounds. Finally, what you get is ready to eat stuff that are low in fat, high in fibre, free from artificial sugars and preservatives with no cholesterol and no trans fats.

KARELA CHIPS

Karela Chips are made from fresh Karela using vacuum frying technology where in, Karela slices are fried at less than 100°C under vacuum, thereby retaining the nutrition, colour, aroma, flavour and taste of the fresh carrots. OKRA
